PURPOSE: A method of making milk rice containing chitosan is provided which allows infiltration of tocopherol as an antioxidant material contained in milk into rice. Therefore, the milk rice is rich in nutrients and improved in storability by preventing or retarding rice deterioration. CONSTITUTION: The milk rice contains 65 to 75% by weight of rice from which foreign material is removed, 25 to 35% by weight of milk and 0.1 to 0.2% by weight of chitosan. The method for producing the milk rice comprises: removing foreign material from the surface of rice; mixing milk containing chitosan with the rice in a rotation drum to allow infiltration of the milk into the rice; and then drying the rice.
