The system to cook and smoke foods, e.g. meat and fish, has an oven where the food (1) is cooked by radiant heat using smoke channels (3) to carry hot smoke which is not in contact with the food. The food is smoked by chilled smoke fumes(6), where heavy matter has been separated by condensation to prevent food contamination. The hot smoke (4) for cooking is generated by combustion (8) of wood shavings. The smoke (5) for smoking the food is generated by pyrolysis (9) of wood sawdust, and it passes through a cooling stage (6) before contact with the food. The system has a smoke extractor (7).
