The open hearth combustion installation comprises a combustion chamber (14) with a gas feed conduit (10), a switchable tap (12) in the gas conduit, and a flue gas feed channel (16) containing a fan (18) for flue gas feed-out from the combustion chamber. A monitoring switching arrangement closes the switchable tap on detection of diminished flue gas feed. The fan has measurement units for dynamic determination of mechanical drive of the fan and a comparative unit for closure of the switchable tap when values of the parameters in accordance with a model for fan operation do not correspond with a volume flow from the fan which is above a threshold value.
