PURPOSE: A method of maturing kimchi in a kimchi refrigerator through plural kimchi maturing stages which mature kimchi at different temperature for different periods of time is provided. It shortens the kimchi maturing time and uniformly controls the maturation degree according to each season. CONSTITUTION: The kimchi contained in a kimchi refrigerator is matured by the following stages: selecting the kind and maturation degree of kimchi with a selection key; performing a multistage maturation stage containing the maturation of kimchi at the lowest temperature in the initial maturation stage and at the highest temperature in the last maturing stage; and storing the matured kimchi at the set temperature. The multistage maturation stage contains a first maturation stage which matures kimchi at low temperature of 10deg.C or less and a second maturation stage which matures kimchi at a temperature relatively higher than the first maturation stage.
