FIELD: food processing industry.;SUBSTANCE: claimed calcium lactate-citrate complex is formed by interaction of alkaline calcium source suspension with solution of lactic and citric acids. Also disclosed are: calcium lactate-citrate complex and potassium-calcium lactate-citrate complex of formulae K[CaCitr0.67Lact]; K0.5[CaCitr0.67Lact0.5]; K0.5[CaCitr0.5Lact0.5]0; [CaCitr0.33Lact]0,[CaCitr0.5Lact0.5]0; [CaCitr0.67Lact]-; [CaCitr0.67Lact0.5]0.5-; as well as calcium-fortified foodstuff containing 0.05-5 mass % of calcium lactate-citrate complex based on foodstuff mass, wherein said complex is formed by interaction of alkaline calcium source suspension with solution of lactic and citric acids followed by addition of said complex to foodstuff. Also disclosed is method for production of calcium-fortified foodstuff wherein lactate-citrate complex is formed directly in fortified foodstuff.
