MEASURING METHOD OF FUCOIDAN CONTENT AND FUCOIDAN-CONTAINING FOOD

PPROBLEM TO BE SOLVED: To provide a method for measuring a fucoidan content in food or in food material by finding out a method for specifying the kind of a fucoidan raw material and a fucoidan content ratio in the food or in the food material. PSOLUTION: In this method for measuring the fucoidan content including fucose, at first the fucoidan raw material species is specified by using the kind and the ratio of a sugar constituting fucoidan, the molecular weight of fucoidan or a material for specific discrimination, and the fucose amount in the fucoidan raw material species is measured, and the fucoidan content is measured based on a fucoidan conversion coefficient known beforehand based on the fucose content to fucoidan characteristic to the fucoidan raw material species, and on the fucose amount in the fucoidan raw material species.
