Use of one or more compounds of formulae (I), (II), (III) and all salts thereof in the manufacture of a composition for administration to an animal in a method of reducing the in vivo cholesterol ester transfer protein mediated transfer of cholesteryl esters between high density lipoproteins (HDL) and low density lipoproteins (LDL) whereby plasma HDL and LDL are controlled as a result of such administration is disclosed, wherein R is sterol or stanol moiety R2 is derived from ascorbic acid and R3 is hydrogen or any metal, alkali earth metal, or alkali metal.
