A method of assessing bird egg age, especially chicken egg age, whereby eggs are sorted according to their classes. Tension concentrators are made on their shells before cooling them down. The eggs are cooled down until their content is fully frozen and the width of appearing slits after shells are cracked is measured. The method is characterised in that the tension concentrators are made on egg shells along their longitudinal axes, cooling down is conducted from parts of the egg shell surfaces from the sides of their sharp poles and the remaining egg shell surfaces are formed adiabatically.
