PROBLEM TO BE SOLVED: To provide Amazake which is a health food digestable well and usable for fatigue relief or the like, and enables the consumption to be enlarged by improving the functionality and by increasing variation of goods.;SOLUTION: The red Amazake is obtained by mixing Monascus purpureus, rice, Sake (rice wine) lees and the like with Aspergillus oryzae. Brown rice and germinated brown rice can also be used. The Amazeke is obtained by adding vitamin B12 (red vitamin), folic acid, 5-8% lactic acid-forming material, a paste-shaped flesh of Japanese plum, a small amount of red perilla and essence thereof, a small amount of water-soluble calcium, 3-5% licorice or an essence thereof, Oryza gaba, bonito peptide or the like to the obtained Amazake.;COPYRIGHT: (C)2007,JPO&INPIT
