Wines or wine products enriched in polyphenolic compounds and antioxidant capacity. The object of this patent is the procedure for obtaining wines enriched in polyphenolic compounds. The heart-healthy properties of wine are associated with its content in these constituents. To this end, a new process is introduced during winemaking, which consists in putting in contact with the dried grape pomace (seeds and skins) in pre or post vinification and filtration of the fermented must through filter plates containing the pomace. This results in wines with polyphenolic content 2 to 20 times higher than those corresponding to current winemaking. Another alternative is to add the dried and ground pomace and then separate the resulting solids by a physical procedure.
