The invention relates to a method and an apparatus for cutting the meat part of a middle (1) by a cut extending from the rind side and up to the underside of the ribs (3) and extending at a distance from the spine. The apparatus comprises a meat knife (10) for performing such cut and a transport arrangement which has a retention device for retaining the middle by the spine with the rib side of the middle facing upwards and which provides a relative movement (A) between the meat knife and the retention device substantially in the longitudinal direction of the spine. The apparatus comprises at least one abutment (21) which is movable in a direction down towards and away from the meat knife and is arranged above the meat knife (10). There may be a wing knife (11) for undercutting the ribs.
