PROBLEM TO BE SOLVED: To provide a simple method for producing epitheaflagallin and epitheaflagallin 3-O-gallate usable directly in food, and to provide a method for producing a bevearge containing epitheaflagallin and/or epitheaflagallin 3-O-gallate utilizing the above simple method.;SOLUTION: The method for producing epitheaflagallins comprises making polyphenol oxidase act on epigallocatechin and/or epigallocatechin gallate in the presence of gallic acid to effect conversion to epitheaflagallin and/or epitheaflagallin 3-O-gallate, respectively. The method for producing the bevearge containing epitheaflagallins comprises converting at least part of epigallocatechin and/or epigallocatechin gallate contained in tea extract to epitheaflagallin and/or epitheaflagallin 3-O-gallate, respectively.;COPYRIGHT: (C)2008,JPO&INPIT
