Formulation and process for preparation of sugar-free sweet sesame bar are described. The product consists of a bulking agent, preferably polydextrose, replacing sugar or jaggery along with added intense sweetener to contribute sweetness, roasted white sesame seeds and added dried Indian gooseberry (amla) fruit pulp to add nutraceutical value to the product. The process consists of mixing all the ingredients, mixing with water for binding, spreading or sheeting into thin sheets followed by baking in hot air oven or in microwave oven to get a ready to eat sweet bar.
