The method for ripening and smoking raw sausage, raw ham, cheese or similar food products, comprises storing and ripening the food in an international standard organization (ISO)-standard container (1) in a raw state under product-specific conditions over a given time period, air-drying the food in the ISO-ripening container, and periodically transporting the ISO-ripening container with the food present in it during ripening and/or smoking. The ISO-standard-container is equipped as a ripening chamber and a smoking chamber for storing and ripening the food in a periodic manner. The method for ripening and smoking raw sausage, raw ham, cheese or similar food products, comprises storing and ripening the food in an international standard organization (ISO)-standard container (1) in a raw state under product-specific conditions over a given time period, air-drying the food in the ISO-ripening container, and periodically transporting the ISO-ripening container with the food present in it during ripening and/or smoking. The ISO-standard container is equipped as a ripening chamber and a smoking chamber for storing and ripening the food in a periodic manner. The smoking is carried out in the ISO-ripening container by using a smoke aroma. The ISO-ripening container is used to complement and/or at the place of a stationary ripening plant and smoking plant and is connected to a stationary unit. An independent claim is included for a device for ripening and smoking raw sausage, raw ham, cheese or similar food products.
