The device has a sensor (1) for detecting a gas or gas mixture coming from a food, and an evaluating unit (9) evaluates signals of the sensor. The evaluating unit has a data memory (13) with different foods assigned to defined food classes and different evaluation and/or measuring programs assigned to the food classes. The evaluating unit has a manual input device (12) for manual input of the food or food class to be tested by an operating person before testing the food. The evaluating unit selects the determined evaluation and/or measuring program based on the manual input.
