The oven has a food container carrying a fence of a furnace of the oven. A central conduit vertically crossing the container evacuates gas and smoke produced by combustion of wood. The conduit loads wood into the furnace of the oven. Shape of the food container with cover is close to shape of torus. A removable plate is interposed between the food container and a furnace, where the removable plate matches shape of lower parts of the container.
