PROBLEM TO BE SOLVED: To provide mix powder for Japanese snack, which is good in workability and with which Japanese snack having good palate feeling can be produced, and to provide Japanese snack.;SOLUTION: The mix powder for Japanese snack contains modified rice flour which is produced by applying at least one selected from compression force, impulsive force, frictional force and shearing force to rice grains or rice flour, and has a swelling degree of ≥4.5 and amilograph gelatinization highest viscosity of ≤500 BU. The Japanese snack is obtained by preparing dough using the mix powder for Japanese snack, and baking the dough.
