PROBLEM TO BE SOLVED: To readily and surely prepare steamed rice subjected to seeding treatment as seeded steamed rice having hard outside and soft inside and suitable for production of Koji (molted rice) for Ginjo liquor (quality sake brewed from the finest rice) and enable production of stable and high-quality Koji for Ginjo liquor. SOLUTION: This method for carrying out drying and cooling treatment of steamed rice for preparing Koji comprises charging steamed rice subjected to seeding treatment into a container made of an air permeable net, supported so as to enable position transfer by a transfer means and having an opened upper surface and then lowering an agitating blade from the upper surface opening part of the container, pushing the blade into the steamed rice to agitate the rice, jetting dried cool air pressurized from the lower direction through meshes of the container made of the net to the steamed rice in the container to agitate the steamed rice and drying and cooling the steamed rice.
