As for this invention, offer the method of producing the vinegar of high acetic acid density more efficiently making use of the acetic acid bacteria where method, and the temperature tolerance which improve the temperature tolerance of the microbe and the especially acetic acid bacteria making use of the new gene and the said gene which participate in the temperature tolerance of acetic acid bacteria origin improve. At the time of this inventing, from the chromosome DNA library of the acetic acid bacteria, from the practical acetic acid bacteria which belong to gurukonasetobakuta being attached with the method of acquiring the gene which possesses the function which even under the temperature condition where usually it cannot multiply makes growth possible, the new gene which participates in temperature tolerance cloning was done. In addition, introducing the said gene into the acetic acid bacteria, temperature tolerance improved remarkably regarding the transformation stocks which become, under ethanol existing when ventilation it agitated cultured the said transformation stocks, it became possible to improve last arrival acetic acid density to remarkable.
