MANUFACTURING METHOD OF RICE CAKE WITH ANTI-AGING GRAIN

PURPOSE: A method for manufacturing the anti-aged tteok is provided to improve the feeing of eating and taste by enhancing the restoration of tteok in case of thawing after freezing. CONSTITUTION: A method for manufacturing the anti-aged tteok comprises the steps of mixing rice, refined salt and purified water and pulverizing the mixture to prepare a tteok composition; spraying the steaming air and the dehumidifying air to the tteok composition to steam and texture mold it; and freezing, cutting and packing the prepared tteok. The steaming air contains 30~60% of vapor, and the dehumidifying air does not contain vapor.
