PURPOSE: A method for extracting supersaturated saline is provided to obtain functional salt from supersaturated saline solution through a method for salting vegetables and by concentrating water soluble components and a salt complex. CONSTITUTION: A method for extracting supersaturated saline comprises the following steps: manufacturing a supersaturated saline solution having 28.4 weight% or more using 39.8 g of sodium chloride per 100g of water; salting vegetables, fruits, or functional animals and plants using the supersaturated saline solution; and concentrating water soluble components and a salt complex which move to an aqueous solution.
