FIELD: food industry.;SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method of production of aromatised yacon-grape drink consists in extracting caraway with liquid nitrogen, in separating corresponding miscella, in preparing, cutting and drying of yacon in field of SHF at specified parametres of the process to residual moisture contents 20% and roasting of yacon, in drying grape husks in field of SHF at specified parametres of the process to residual moisture content 20% and in convective finish drying of grape husks to residual moisture content 5%; in mixing yacon and grape husks, in soaking produced mixture with separated miscella at simultaneous pressure build-up, in pressure drop to atmospheric and in simultaneous freezing of mixture with cryo-milling it in medium of precipitated nitrogen.;EFFECT: method facilitates manufacture of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
