Cinnamon extract comprises less than 10 ppm of coumarin and less than 0.75 wt.% of cinnamaldehyde, with respect to the total weight of the cinnamon extract. Independent claims are included for: (1) a food supplement, health food or fortified food comprising the extract of cinnamon and at least one extract of cranberry, Hibiscus, bearberry, heather, buchu, green tea, ash tree, caraway, meadowsweet, rosemary, thyme and/or lemon balm; and (2) a process of fabricating the cinnamon extract, comprising carrying out an extraction with a polar solvent from extracts of cinnamon bark.
