PPROBLEM TO BE SOLVED: To provide flavonoid 3'-hydroxylase originated from Eustoma grandiflorum (Raf.) Shinn. PSOLUTION: There is provided the polypeptide described in one of the following (a) to (d): (a) a polypeptide composed of a specific amino acid sequence; (b) a polypeptide composed of a specific amino acid sequence wherein one to plural amino acids are replaced, added, deleted or inserted and which has an activity to catalyze a reaction for binding a hydroxyl group to the 3'-position of a flavonoid skeleton B ring; (c) a polypeptide composed of an amino acid sequence having a homology of at least 70% based on the specific amino acid sequence and has an activity to catalyze a reaction for binding a hydroxyl group to the 3'-position of the flavonoid skeleton B ring; and (d) a polypeptide encoded in a polynucleotide hybridizing with the complementary strand of a polynucleotide composed of a specific nucleotide sequence under a stringent condition, and has an activity to catalyze a reaction for binding a hydroxyl group to the 3'-position of the flavonoid skeleton B ring.
