PROBLEM TO BE SOLVED: To obtain satisfactory yeast having improvement effect and to provide a method for biologically treating waste water, with which amount of oils and fats in waste water is reduced by using the cultured yeast, since waste water from a low pH to a high pH discharged by using an acidic cleaning agent or basic cleaning agent for stationary cleaning of production facilities of food, etc., causes a problem, yeast that removes oils and fats in high rate, has resistance to fluctuation of pH and lives together with various bacteria is excepted and a method for biologically treating waste water friendly to the environment not using a chemical substance is demanded.;SOLUTION: The yeast belonging to the genus Yarrowia lives together with bacteria and assimilates animal and vegetable oils and fats in high rate under conditions from strong acidity to strong basicity.
