A process is described for the preparation of dietary fibre enriched biscuit using fibre of mango processing waste yielded at finisher stage. Clean, creamy colored, odourless, light weighed and high quality dietary fibre was incorporated in a certain proportion into the biscuit ingredients. The dietary fibre content of the finished product was about 5 times higher than that of the control. Biscuits had a shelf life of approximately 180 days when wrapped in food grade 100 guage polypropylene pouches at 30±5 °C. The biscuits prepared in accordance with the invented process can be taken as fibre fortified diet for children and adult alike. These may prove helpful in curing constipation and other ailments related to fast food habits.
