PURPOSE: A method for manufacturing grape wine without sulfurous acid is provided to prepare grape wine with less volatile acid. CONSTITUTION: A method for manufacturing grape wine without sulfurous acid comprises: a step of crushing grapes; a step of performing thermal treatment of crushed grapes at 50-70C for 10-30 minutes; a step of cooling at 15-25C; a step of inoculating the cooled grapes with 0.02% of dry yeast and fermenting at 15-25C for 5-10 days; a step of pressing the fermented grapes and removing grape pericarps and seeds; a step of fermenting for 5-10 days; and a step of maturing the grapes for 2-3 months.
