The method involves managing quality of oils and fats during deep frying and baking of food product in an enterprise according to hazard analysis and critical control points (HACCP) or similar quality assurance and control system, and acquiring electronic data of quality criteria for central evaluation and documentation at electronic memory. The acquired data is sent to a processing apparatus by data cables or electronic wireless system. A warning is provided to data collection system when preset quality criteria is attained and appropriate measure is provided.
