PURPOSE: A monellin mutant protein is provided to ensure excellent thermal stability and to wide pH resistance and to maintain sweet taste.;CONSTITUTION: A monellin mutant protein 24th amion acid(glutamic acid) substituted with alanine, leucine, phenyl alanine, or tryptopane in an amino acid sequence of single chain monellin. The mutant has an amino acid sequence selected from sequence numbers 3-6. A gene encoding the mutant is denoted by sequence number selected from sequence numbers 7-10. A recombinant vector containing the gene encoding the mutant is a recombinant vector for E.coli expression. The recombinant vector is pMOA, pMOL, pMOF or MOW.;COPYRIGHT KIPO 2012
