PROBLEM TO BE SOLVED: To provide an operation method of a solar heat collection device that prevents a temperature of a heat receiver from being increased partially during heliostat replacement and eliminates the risk that a casing is burn damaged, thereby improving quality, and to provide a solar heat collection device.SOLUTION: In the operation method of the solar heat collection device 10, the solar heat collection device 10 includes: a drive control unit 16 which drives and controls the heliostat 15 so as to be switchable between a light collection position where a reflective light of the heliostat 15 is collected at an opening 12 and an evacuation position where the light escapes outside of the casing 11; and a control unit 17 which drives and controls the heliostat 15 so as to cause a path for the reflective light of the heliostat 15 to be divided into a plurality of directions upon switching based on a heat resistant strength of the casing 11 and an amount of power consumption required for driving the heliostat 15.
