摘要

An objective of the present invention lies in providing a bitter melon dried product with high vitamin C content and a preparation method for same. Specifically, an objective of the present invention lies in providing a bitter melon dried product capable of keeping original form, color, smell, and aroma of a fresh bitter melon to the maximal extent and comprising vitamin C, coarse fiber, various amino acids, and mineral nutrition ingredients. The present invention further relates to a drying method for improving freshness of a fresh bitter melon, and the method comprises: cooling a fresh bitter melon under a condition of cooling at a cooling rate of more than 20°C per minute averagely, and then preparing a bitter melon dried product through freezing.
