PURPOSE: A manufacturing method of sprouted embryo is provided to increase the contents of various nutrients, GABA including free amino acid, isoflavone and the likes by isolating the bean embryo from soy seeds and sprouting the isolated bean embryo.;CONSTITUTION: A manufacturing method of sprouted embryo comprises the following steps: drying raw bean in a hot air dryer at 35°C for 72 hours; crushing the bean seeds using a soybean dehulling machine; isolating the embryo by using a 2.36mm, 2.0mm, 1.18mm sieve; sprouting the isolated embryo using approximately 20°C of water for 20-24 hours and manufacturing sprouted embryo with enhanced nutritional functions and bioactive substances; collecting the sprouted embryo and boiling for 20 minutes by steam; and hot air drying or freeze-drying the steamed embryo. The bioactive substances are free amino acid and gamma aminobutyric acid(GABA).
