Industrial preparation of amino-acids by directly hydrolyzing proteins catalyzed by sulfuric acid, comprises hydrolyzing moist proteins in an abattoir at a temperature of 100-120[deg] C and then introducing sulfuric acid to control pH, conductivity, temperature and redox potential.
