Procedure and crystallization system struvite for recovering phosphate in urban or industrial waste water, preferably with concentrations higher phosphate 50 mg P / L, more preferably greater than 100 mg P / L, and where phosphates are recovered by crystallization in pellet form struvite, which can reach a diameter of up to 5 mm.
