A method of quantitative determination of chitin by enzyme immunoassay as a general marker of contamination or destruction by fungi food, soil, building structures and biological materials (blood or plants), comprising processing the extracted substrate by the enzyme chitinase and subsequent reaction with specific antibodies to chitin, wherein that utilizes a new principle of determination of molds, allowing to identify with high accuracy the presence splash x fungi in the sample, regardless of species differences micromycetes, as well as on the phase of their growth and morphological characteristics.
