Drying process for successive cycles of warming pulse vacuum (CAPV) to obtain dehydrated foods crisp. The present invention combines the functions of drying and texturing of fruits and vegetables, providing the final products with differentiated characteristics (low levels of moisture, water activity and crispy texture).This process consists in applying in the products to be dried in successive cycles of warming pulse vacuum, through the packaging of canned samples in a chamber and warm them up for the following to reduce the pressure of the system, for the implementation of a new cycle of drying and textur Modules of the products.
