The present invention relates to an ultra high pressure extract of onion extracted under very high pressures of 400-800 MPa. Compared with an onion extract prepared by the conventional method, the ultra high pressure extract of onion contains an equal or lower amount of quercetin but has significantly increased inhibitory activity against HMG-CoA reductase reducing blood cholesterol level, and contains reduced sulfur compounds giving off an unique unpleasant smell, thereby being able to be used as an active ingredient for a pharmaceutical composition for treating and preventing obesity, hyperlipidemia, thrombosis, arteriosclerosis, stroke, or myocardial infarction caused by high blood cholesterol level or a health functional food composition for reducing blood cholesterol.
