The present invention relates to a method for selecting refrigerated beef and frozen beef by using substrate reaction and, more specifically, to a method for selecting refrigerated beef and frozen beef by measuring substrate reactivity of various enzyme proteins. According to the present invention, enzyme proteins having greatly different levels of substrate reactivity between refrigerated beef and frozen beef are selected, and substrate reactivity of meat is measured using the selected enzyme proteins, thereby accurately selecting refrigerated beef and frozen beef in a short time at low costs.
