The present invention relates to a method for manufacturing lacquer tree fast-fermented bean paste using a Fomitella fraxinea and lacquer tree extract, and to the lacquer tree fast-fermented bean paste manufactured thereby. The lacquer tree fast-fermented bean paste is produced by using beans impregnated and soaked in a Fomitella fraxinea and lacquer tree extract through fermentation using Japanese cedar, wherein the toxicity of the Fomitella fraxinea and lacquer tree extract is neutralized by the level of not inducing an allergic reaction. The lacquer tree fast-fermented bean paste can be hygienically produced by being protected from pests or various bacteria by phytoncide generating from the Japanese cedar, and a user can expect immunity improvement if taken. The lacquer tree fast-fermented bean paste has reduced unique off-flavor of fast-fermented bean paste by Japanese cedar scent, and shows excellent antioxidant activity due to physiological activity of Fomitella fraxinea and lacquer tree.;COPYRIGHT KIPO 2016
