The present invention relates to a method for manufacturing gimbap (laver rice rolls) with saury, and saury gimbap manufactured thereby. According to the present invention, the method for manufacturing gimbap with saury comprises: a saury defrosting step (S100) of leaving frozen saury at a predetermined temperature to defrost the frozen saury; a foreign material removing and washing step (S200) of removing foreign materials attached on the surface of the defrosted saury and washing the saury; a step (S300) of scattering salt on the surface of the washed saury to add a salty taste to the saury; a step (S400) of spraying lemon juice on the saury seasoned by salt to season the saury with the lemon juice; a roasting step (S500) of inserting the saury seasoned by the lemon juice into a grill or a pan, and heating the grill or the pan to roast the saury; a saury trimming step (S600) of making cuts on the back part of the roasted saury, and removing thick bones and internal organs from the saury; and a step (S700) of using the trimmed saury to make gimbap. According to the present invention, saury gimbap uses saury providing excellent nutrition and also being tasty, so as to be enjoyed as healthy food by people of all ages. Moreover, the saury from which fishy smell is removed is used as a filling material, so texture is improved, and good taste and excellent nutrition are also provided.;COPYRIGHT KIPO 2016
