PROBLEM TO BE SOLVED: To provide a production method of tulipalins which utilizes a plant tissue as raw material of a substrate, and ethanol, a mixed solvent of water and ethanol and an activated carbon as extraction and purification means, thereby producing tulipalins with environmental load reduced and in a mild condition.SOLUTION: A production method of tulipalins comprises the steps of: extracting tuliposides being a substrate from a plant tissue by using a mixed solvent of water and ethanol; bringing the extract solution in contact with a tuliposide converting enzyme (immobilized tuliposide converting enzyme) immobilized to anion exchange resin, thereby obtaining tulipalins in the enzyme reaction liquid; and absorbing and collecting tulipalins from the enzyme reaction liquid by using an activated carbon.
