PROBLEM TO BE SOLVED: To provide frozen jiaozi capable of being roasted without using oil and water when it is cooked with a cooking tool such as a frying pan, and capable of achieving a good roasted surface and preferable sticky texture having firmness unique to jiaozi, and a production method thereof.SOLUTION: Coating dough for jiaozi includes at least wheat flour, salt, water and hydroxy propylene methyl cellulose and/or methyl cellulose which are water-soluble cellulose derivatives, and on a part which is a roasted surface of jiaozi, a solution including heat denaturation whey protein or methyl cellulose is applied and then the jiaozi is frozen.
