A method for producing of a brined white cheese either with use of stainless stackable trays and stainless pallets-cisterns or with use of stainless pallets-cisterns only, consisted of a tray for dry-salting (1) with suitable depth, three closed sides and reinforced angles (2), suitable for arrangement and turn over. A pallet-cistern (3) for soft cheese maturation and storage having reinforcements at the ends (4) and being sealed up with separate cap (5) with circumferential reinforced zone (6) and a cavity (7) receiving the rubber sealing (8), provided with a brine replenishment aperture (10), a brine level indicator (9), a sampling valve allowing the use of a syringe and a perforated sheet (11). Sealing is obtained via special clip-type closure means (12) or eccentrics. The pallet-cistern bears a base of beam construction (13) for arrangement purposes. The reinforcement and the base are completely welded and closed sections. The monitoring of the pallet-cistern is achieved by the use of a tag whereon all cheese data are electronically stored up.
