The present invention relates to a process for extracting Camellia oleifera Abel fruit shell polysaccharides, comprising the following steps: screening Camellia oleifera Abel fruit shell powder by means of a 40-mesh to 60-mesh screen to obtain treated powder; mixing the treated powder to water, the weight ratio of the Camellia oleifera Abel fruit shell powder to the water is 1:10-20, so as to obtain a mixture; performing ultrasonic and/or microwave extraction on the mixture, the condition of the ultrasonic extraction being ultrasonic extraction for 15-35 min at 80-100°C, the condition of microwave extraction being microwaving for 5-9 min at 240-700 w; concentrating the extract at 40-50°C and then adding ethanol, the volume fraction of the ethanol being greater than 80%; then performing ethanol precipitation for more than 12 hours at 3-5°C and separating the precipitate from the extract to obtain Camellia oleifera Abel fruit shell polysaccharides.
