The present invention relates to salicornia herbacea salt containing salicornia herbacea fermented with a salt-tolerant microorganism as its active ingredient and a method for manufacturing the same including: a step of producing dry salicornia herbacea by drying each of the leaf, stem, and root of salicornia herbacea; a step of producing a salicornia herbacea extract by extracting the leaf and stem of the dry salicornia herbacea; a step of producing salicornia herbacea powder by grinding the root of the dry salicornia herbacea; a step of producing a salicornia herbacea mixture by mixing the salicornia herbacea extract and the salicornia herbacea powder with each other and performing stirring thereon; a step of producing fermented salicornia herbacea by adding the salt-tolerant microorganism to the salicornia herbacea mixture and performing fermentation thereon; a step of producing a salicornia herbacea concentrate by heating the fermented salicornia herbacea; a step of producing salicornia herbacea salt water by adding salt water to the salicornia herbacea concentrate and mixing the salicornia herbacea concentrate with the salt water; and a step of producing the salicornia herbacea salt by heating the salicornia herbacea salt water. According to the present invention, not only the leaf and stem of the salicornia herbacea but also the root of the salicornia herbacea containing a large quantity of taurine is used, and thus the effective biological activity of the taurine is used. According to the present invention, the fermentation is performed by the use of the salt-tolerant microorganism, which inhabits a salty place and is capable of fermenting without hindrance to growth even in the salicornia herbacea as a halophyte containing a lot of salt in its cells, and thus the bitter taste of the salicornia herbacea can be reduced, the flavor of the salicornia herbacea can be enhanced, and the active ingredient of the salicornia herbacea can be contained in an efficient manner.
