The present invention relates to a manufacturing method of fish cake for fish cake gimbap and a manufacturing method of gimbap using fish cake. More specifically, the manufacturing method of fish cake for fish cake gimbap comprises: a step of preparing fish cake of a shape corresponding to seaweed for gimbap; a step of adding 20-40 parts by weight of starch syrup, 20-30 parts by weight of soy source, and 20-30 parts by weight of oyster source to 100 parts by weight of the fish cake and mixing the ingredients to stir-fry the fish cake for 2-10 minutes; and a step of cooling the stir-fried fish cake. The manufacturing method of gimbap comprises: a step of spreading boiled rice on the prepared fish cake; a step of placing fillings on the fish cake on which the boiled rice is spread; and a step of rolling the fish cake on which the fillings are placed in a roll shape. According to the present invention, the fish cake is used in a shape corresponding to seaweed for gimbap to increase overall taste and texture. Also, the fish cake for gimbap is separately manufactured to prevent the fish cake from hardening even if time elapses. A preference for gimbap is increased to promote rice consumption.;COPYRIGHT KIPO 2017
