The present disclosure discloses a method for increasing the content of allysine or allyl in garlic through ultrahigh pressure treatment. Since the high-pressure treatment is a non-heat treatment method, component destruction can be prevented, and a separate sterilization process is not required, thereby reducing cost and energy in the production process. In addition, the method disclosed in this specification can remarkably enhance the content of alicin or algin in garlic while maintaining the change in appearance thereof. Therefore, this method and the garlic processed by this method can be applied to foods, pharmaceuticals, or cosmetics using garlic It can be usefully used in the field.
