The present invention relates to a preparing method of seasoned raw pollock, comprising the following steps of: (a) slicing pollock flesh obtained by removing skin of pollock; (b) adding Euphorbiae humifusae powder and Dryopteris crassirhizoma NAKAI powder to deep ocean salt water to prepare a salt mixture; (c) preserving the sliced pollock flesh of the step (a) in the salt mixture prepared in the step (b); (d) adding Toothed ixeris powder and umbrella androsace powder to vinegar water to prepare a vinegar mixture; (e) immersing the pollock flesh preserved in the salt mixture of the step (c) in the vinegar mixture prepared in the step (d), and aging the same; and (f) adding salt, red pepper powder, garlic, ginger, sugar, starch syrup, vinegar, and sesame to the aged pollock flesh of the step (e), and mixing the same. The present invention also relates to seasoned raw pollock prepared by the preparing method, and processed food using the seasoned raw pollock.
