The present invention relates to a method for preparing a fermented jujube fermented with improved liver function or immunity through Bacillus subtilis fermentation,Bacillus subtilis) HA fermentation by fermentation using yeast, and a method for producing a fermentation broth having enhanced functionality such as gamma-polyglutamic acid (-PGA) and the like, by producing fermented juice of jujube, black jujube and jujube seed extract. In the present invention, besides the representative jujube raw material, the optimum amount of -PGA production medium, vegetable juice, dandelion sugar pickle and mono-sodium L-glutamic acid (-PGA), physical properties and palatability were improved by mixing mono-sodium L-glutamic acid (MSG), and functional foods having improved liver function or immunity were developed.;
