The invention relates to processes for preparing bakery products and to a beer yeast biomass enriched with organic selenium. According to the invention, the processes include the following stages: 1. preparing the bioingredient based on beer yeast enriched with organic selenium max. 99.9%, concentration of selenite and selenate1% of the total selenium, as a bread-making raw material, by preparing the maintenance culture, preinoculum and inoculum of the yeast S. cerevisiae DBVPG 38P, seeding the fermentation medium with liquid inoculum, separating and purifying the biomass, optionally followed by drying, and further mixing it with waste beer yeast in various ratios, followed by lyophilization/atomization drying, and 2. preparing the bread products enriched with organic selenium by the direct method, using white wheat flour with wet gluten content of more than 30%, water, salt and, optionally, other ingredients, and, as a biochemical raising agent, the bioingredient prepared during the stage 1, in admixture with bakery yeast.
